To make the wines, we use traditional fine winemaking techniques such as small lot fermentations, the use of indigenous yeast on the grapes to conduct the fermentations, little or no fining or filtration, and small barrel aging. All the wines are made, tasted, and blended by the production team of Michael, Anne, and Matt.


2007 Dry Riesling, McFadden Farms

We are excited to make this kind of aromatic, minerally white wine and we feel that the combination of aromatic fruit, and rich, velvety mouthfeel in our Riesling is in keeping with the signature Dashe style that defines our line of red wines. Our first vintage in 2006 was such a success that we almost doubled our production to 430 cases in 2007.

2006 Late Harvest Zinfandel

We’ve made a Late Harvest Zinfandel from the remarkable Bella Vineyard, owned by Scott and Lynn Adams, since 2001. We love this vineyard for the complexity and intensity of the fruit, and also for the wonderful acidity of the grapes that help make this unctuously sweet dessert wine so focused and clear. It’s never cloying, and always finishes with a crisp, clean, sweet note. Without a doubt this is one of our most popular wines. Unfortunately, in 2006 the climate and vines collaborated to reduce the yield in the vineyard substantially. So, we were only able to make about half the normal quantity of this excellent wine. As is traditional with this wine, we let these grapes hang on the vine over a month after the rest of the grapes in the vineyard were picked, to concentrate flavors and sugar. In early November, just before the rains, we finally harvested the grapes to create this black, intense essence of zinfandel.

2005 Zinfandel Todd Brothers Ranch Old Vines

The 2005 vintage was a classic vintage, with a long, extended, quite warm ripening period that allowed the vines to concentrate flavor in the grapes. We consider it one of the finest vintages of Todd Brothers Zinfandel that we have produced, a dark, concentrated wine with tremendous depth and balance.

2005 Zinfandel Louvau Vineyard Old Vines

These wonderful 70-year-old vines were discovered by John Louvau on his newly-bought property in 1989, hidden beneath a field of weeds and blackberry vines that had grown over the old grapevines. Ecstatic over his discovery, John nursed the vines back to health and now they produce some of the best grapes on the entire property. These are classic old-vine zinfandel: head-trained, dry–farmed, with thick gnarled trunks popping out of fist-sized rocks that make up the old riverbed. They produce less than two tons of complex, intense grapes per acre. We love these old vines, because they make a classic Dry Creek Valley old-vine zinfandel, with the black raspberry, minerality, and deep aromatic dusty spice that make Dry Creek zinfandels so popular and sought-after.

2004 Merlot Iron Oak Ranch

We have yet another splendid example of Dashe Cellars unique blend of intensity and subtlety from our favorite Merlot vineyard, the Iron Oak Vineyard high up in the mountains of Potter Valley. (How can it be a mountain if it’s a valley? We’d have to use maps, but you’ll have to take our word on it. It’s in the mountains).

2003 Cabernet Sauvignon Alexander Valley

This is a classic Cabernet Sauvignon from Alexander Valley—quite intense and complex, and at the same time possessing a mouth-coating, velvety, sensuous texture. It is certainly one of our favorite wines from an exceptional hillside vineyard—the Todd Brothers Ranch—in the Geyserville region of Alexander Valley.
