We have yet another splendid example of Dashe Cellars unique blend of intensity and subtlety from our favorite Merlot vineyard, the Iron Oak Vineyard high up in the mountains of Potter Valley. (How can it be a mountain if it’s a valley? We’d have to use maps, but you’ll have to take our word on it. It’s in the mountains).
This Merlot has an aroma that immediately entrances you: deep, black cherry fruit, with hints of chocolate and peppery spice, an almost floral aroma of lavender, violets, and rose. It’s a very pretty wine. Then, you take a sip and all of the flavors come flooding at you like a freight train: cherry, plum, chocolate, vanilla, clove and pepper spice. It finishes with a very lengthy fruit flavor that just begs you to take another sip.
We always blend Cabernet Sauvignon and a little bit of Petite Verdot in our Merlot, which gives it a depth and complexity seldom seen in California Merlot. It really has a flavor profile that is more reminiscent of the wines of Pomerol or Saint Emilion rather than a typical wine from the coast of California. At any rate, we feel sure that you will love this wine as much a we do. Please decant it an hour before serving, to let the wine develop its lovely aromas and its velvety mouthfeel.
